Stolen iPad found with empty storage.

My iPad was stolen in May and I set the activation lock via my iPhone. I got back the stolen iPad today but it seems that the system has been updated and none of my downloaded apps were there. Also all my photos and videos are gone. The entire iPad looks like a complete new one except for its physical appearance. Is it possible if I send the iPad to an Apple store and have it examined?

Anyone can erase any iOS or iPadOS device by restoring it in iTunes. Thieves typically do that right away thinking that will let them use it, but of course activation lock still prevents that. All you have to do is restore it using your iCloud or iTunes backup to get your content back.
