If it's a game from Apple Arcade, then the data is already saved in iCloud via Game Center. If the game is a third-party game, you can save the it's data to iCloud via Settings > Name > iCloud > scroll to see the game listed and turn on. Doing this will allow you to save the data which will be available in a backup.
