WHEN you are in Windows there is another partition on your OS X DVD \Bootcamp
with Apple Setup.exe
You might want to even copy to your Windows partition in its own folder and run from there, and sometimes navigate down into Apple\Drivers\ to find Bootcamp64 if need be. Or even put on a flash memory card.
I always remove those startup, services, and programs I don't use or want after installing (and maybe even before the restart). MobileMe, Bonjour and others.
Whether you want Apple Software Update to automatically check for updates or not, otherwise it is there to use manually. Otherwise it will pull down Safari, iTunes and others, which I prefer to manually download and install at my convenience.
You won't see \Bootcamp Windows drivers while in OS X.
