delete e-mails coming from address not in Contacts
I wish that all e-mails coming from an address NOT in Contacts list, are automatically deleted (moved to Bin). (I use Mac Mail and Mac Contacts)

There is an option for that when you create a Rule.
I would not put them in the Trash, but rather designate a specific mailbox for it;
anyway, all you probably need is a single Rule like this:

What you are describing is a "whitelist" filter. This is not a very good way to manage your email or security. What if one of your contacts changes their contact information and sends an email from their new account? What if you receive a legitimate email from an organization/acquaintance not on your "whitelist"/contacts?

I check every day the "deleted" mails in the Bin: if I find an interesting mail I add the related address to my Contact list.
Without this hoped "whitelist" filter, every day I have to add to my Rules around 10 new address to filter the undesired mails from unknown senders!
