Do I lose all of the music that I have downloaded over the last three years through my paid monthly subscription if I cancel my Apple Music subscription?

Yes. - You will lose the music you downloaded as part of your Apple Music subscription but if there is a song you purchased from the iTunes store separate, this won't be affected.

Music downloaded through Apple Music is available only as long as you have an active subscription. If you purchased music through the iTunes Store, you would still retain the rights to that.
