Getting/making calls on new iPhone 11
I’ve just transferred all my data and apps from my 6sPlus to my 1, but I cannot make or receive calls except from my old phone. What do I need to do? Remove all data etc from my old phone?

You may the working SIM in your iPhone 6s Plus and not in your iPhone 11. Can you remove the SIM card from your iPhone 6s Plus and install it in your iPhone 11? That should do the trick.
