I notice there is a audio sample rate setting and we can choose between 8bit and 24bit. Do these settings affect the sound quality of the songs being played?

It depends on how the original song was recorded. Selecting a higher bit rate than the rate used originally to store the music won't improve quality and you’ll only be wasting storage space.
