You should be able to cancel subscriptions via the method you suggested, please be sure to make sure you follow these photo + verbal steps at See or cancel your subscriptions – Apple Support

You can try and request a refund with Apple following the steps here Request a refund for apps or content that you bought from Apple – Apple Support
