Apple ID

On my new device can I have a different Apple ID then my other products that I have such as my watch my phone and my MacBook Pro this new device is a iPad Air.

You can have a different Apple ID on the iPad Air. Your data and purchases won't sync.

Apple ID - create a new.

Apple ID – Create

You can try setting up Family Sharing between the IDs if you want to be able to share purchases made with the IDs.
