I want to change my iCloud email address not just add more but delete the original and make a new iCloud email address

Sign out the existing Apple ID account from iPhone https://support.apple.com/en-in/HT208242

You will see that Apple ID is written in the field , delete the address and click on create new Apple ID , you have to follow upcoming steps to create the new mail address say example1@icloud.com
