Unable to see the built-in speakers as an option in the Output window after latest software update Catalina 10.15.6. The internal speakers were working before the update. Any suggestions on how to fix?

Try resetting the SMC.
Try resetting the SMC.
In addition to the SMC, try resetting NVRAM.
Also, try restarting in Safe Mode and see if the speakers show up while in Safe Mode.
I had the same issue... tried all possible options no luck. Then I reverted back the OS update (10.15.6) with my time machine back-up (10.15.5) and speaker is showing and working fine.
Looks like there is some bug in the new update (10.15.6).
I'm not seeing anything that stands out from the report.

Also, can you test to see if external speakers work or show up? And also if there are any external drives plugged in? In particular audio devices, such as speakers s, headphones, whether using usb-c or the audio port? Or even if you use any Bluetooth devices normally, (Such as speakers etc)?
As said before safe boot is a great test, as well as testing in another user, if the firmware resets did nothing, (SMC and NVRAM). Thanks!

Im having the same issues on my MacBook Air
This issues drive me crazy, as after reset its work then couple hours the cranking noise ans disables. Re turn off and reset again etc and keep hapening again and again..
