Airplay not always available

We use airplay in our meeting rooms at the office to share screens, directly to a tv or in a zoom meeting. One of the rooms is only ever available in Airplay intermittently. We have tested with multiple users at multiple times, and have found no pattern yet as to why it is only available sometimes. Can anyone offer any solutions?
