i upgraded to big sur beta to work on ios 14 development but can’t open other necessary applications, like vm hypervisors. has anybody downgraded successfully and can point me in the right direction?

There is no such thing as downgrading to a previous macOS version. Your only choice is to revert to a previously backed up version. If you didn't make a backup, then you now know why you should have done it.
Alternative, erase the drive, install the prior macOS version, lose your previous data.
