You can turn OFF contacts ON YOUR MAC to prevent synching with your iPhone by doing the following-

On your Mac, Open System Preferences ➔ Apple ID (Top Right) ➔ iCloud (Left Column) ➔ Contacts - UNCHECK Contacts. This will prevent synching of contacts with your iPhone.
