Apple Watch Pairing

Why do you have to reset your Apple Watch each time you try pairing it up with your phone? I accidentally pressed okay and declined an update and it unpaired from my phone, and the only way I could get it to re-pair was to erase all my data. Why does this happen?

That's the way it works,when you pair you will be offered the update if there is one.

Why not let it update?.
