Emoji
I followed the directions on how to activate emojis on my iPad Pro, but the emoji or the earth icons don't show up when I start creating a text and an email message.

Hiya! Awesome, glad to hear it's entirely up to date. So, when you go to: Settings > General > Keyboard > Keyboards, what all do you have listed at the top?
Also, do you have your settings setup so that the entirely keyboard is showing at the bottom or is it split left/right?
