In Settings a lot of my selection choices are greyed out. Cannot change those settings. I have tried unpairing and recover a backup, unpair set up as a new watch. Neither gives a choice This is a screenshot of my problem. There are lots of other settings the same way.

It seems like you have some questions about the Location Services settings on your Apple Watch.
As detailed on your iPhone in the Watch app under Privacy > Location Services, "Location Services, Analytics, Contacts and Health settings are shared between Apple Watch and iPhone. If you change them on your iPhone, the same changes will be applied to every paired Apple Watch. You can manage these settings in the Privacy section of iPhone Settings."
