If you have a backup of the 6s, you could restore the back up to another device to recover the data from the 6s. If you were syncing data with iCloud, you can access that data by syncing it to another device or going to iCloud.com using a computer browser.
Restoring from a backup erases all data currently on your device. Any data newer than when the backup was made will be erased. A restore is an all or nothing restore. You can't access a back and only restore certain files.
