how can I disconnect icloud without losing my data

as a newbie I feel a bit forced to purchase icloud without really knowing I was getting into a buying process that ends up in acquiring more icloud space...well done Apple! This is really sucks! I just spent a lot of money for a new macbook air and want to use the space I have purchased. How can I disconnect iclout from my operation without losing my data?
