Here is a simple question: is it or how it is possible to have an iPad signed to my Apple ID but without any possibilities for my daughter to get into my personal data, such as photos, music, massangers, flies, apps, etc.?
Or should and can I create a different account, with different ID ?

It's not. Your daughter should have her own unique Apple ID, then as the parent, you would set her up with Family Sharing and use Parental Controls if she is a minor.

From what age the ID starts? She is 5 and I had a refusal when wanted to create an ID for her
