I understand how Sign in with Apple ID works. My question is: For those accounts I have had for years - how do I change my current enrollment with them to use this Sign in with Apple ID feature? I want to have the benefits of a 'hidden' email that come with this new feature.

I am not sure what you mean by "change my current enrollment with them." But, anyway, have you seen Hide My Email for Sign in with Apple https://support.apple.com/en-us/HT210425?
Yes. But that is so off topic. all I want to know is how to enable the service for those applications I am ALREADY using that participate but for which I have NOT participated. And want to change my preferences and now USE the service. Why is this question so difficult. It seems common sense. I have been going along for years using services. Now APPLE comes up with a cool way to hide my email. I want to use that service. But I am ALREADY signed up ( years ago) with these services. How do I get on board with the new feature.?
Name 5 services that use this feature. I am not getting anywhere with you folks. Maybe an example will help you understand what I am asking.
