How to revert pdf back to an editable pages document
When saving a Pages document it was converted to Pdf but now i can no longer edit my document and cannot figure out how to revert it back to its original file type

In Pages, there are two means to generate a PDF from the original Pages document.
Neither of these choices replace the original Pages document via a Save or any other operation. What happens when you try to open the original Pages document, which is the document you should be editing, before regenerating another PDF? Do you have a Time Machine backup of that original Pages document that you could restore?
Apple does not include a PDF Editor in the operating system, and these will cost you money in the Mac App Store. None of these will convert the PDF back into a Pages document. Some will convert it back to a Word .docx document.
