What can do with this Ipad 1st generation Mini, software update is up to date (9.3.5)

You want or need to run the old software and old hardware, so figuring out what works and what doesn’t is part of that cost.

Rummage the app store, though developers supporting releases older than iOS 11 is less than common.

AFAIK, there aren’t any screen recording apps or dual-display as far back as iOS 9.

The built-in screen recording tools arrived at iOS 11.

AirPlay arrived at iOS 7, so that's a potential option here, as is an external Lightning to HDMI adapter.

Few apps support external displays, but I’ve used a Lightning adapters with Keynote and that worked.

You should STOP using that nearly 4-year old Safari web browser, as it is, probably, not safe and secure to use any longer.

There are NO MORE older, compatible, popular third party apps for any 8 and 9-year old iPads, any longer.

As I mentioned, almost ALL older, third party apps have been removed, forever, by the third party app makers.

For writing, your only option is the basic iOS Notes app.

Everything you wish to do on an iPad, regrettably, CANNOT be done on that very old iPad now.

It is no longer possible, now.

These old 8 and 9-year old iPad models are going to be OBSOLETE, ending their useful life, by the end of 2020!

That model doesn't support any iOS version beyond the one that's currently running on it, because of hardware incompatibiliy.

That said, you're not addressing Apple here. We, just users like you, are not aware of Apple decisions / plans.

The 2012, 1st generation iPad Mini is a very nearly 8-year old device.

Apple is not responsible for the apps you purchase or get for free from the iOS App Store.

Apple iOS App Store is Apple's product store for others that create apps to sell to Apple through Apple's store.

In turn, Apple receives a portion of the cost of a sale of an app that someone creates and sells

It is these app makers that decide what Apple devices and device software they wish to continue to support.

Most app makers have decide NOT to support 8, 9 and 10 year old Apple devices with 3 and 4 year old device operating systems.

So, there is not much you can do with old an iPad, any longer.

If you need a much more recent and still updated Web browser

Go to the iOS App Store and look for

It doesn't matter when you received this iPad as a gift.

An iPad 2 is 9-year old technology!

Use it to play music that is put on it and sync'd through iTunes on a Mac or PC computer.

Put photos/images on it. Save images from the Web on it!

Play YouTube videos!

Write or type on it using the iOS Notes app!

You can use that iPad to make Apple FaceTime calls to other friends and family that have Apple iOS devices.

OR

Just simply bring it to an Apple store and to have this iPad recycled responsibly. by Apple.

Sorry, there is nothing more for this old an iPad, any longer in 2020

I own and still use my own 2011 iPad 2, but I put a whole bunch of things in place, years ago, to make sure I keep my own iPad 2 running with ALL of my older installed apps still on it and working and I have use of older iTunes versions on a computer to keep that 9-year old iPad going with all of those older apps and data saved and backed up to that older version of iTunes.

So, I can still fully restore this old iPad 2 I have, if I choose to, if something does glitch on this iPad in the future.

The iPad 2 you have has had no such past things put into place and it is now too late do to anything of that with that iPad 2 now!

Recycle it with Apple, if you can't use it with its limitations, now!

Why would you state that!

That seems sort of a mean comment???...

I keep my expensive Apple devices for a very long time, so even with my newer iPads, I will put things in place to male sure they will have a long working life, as well!

When Apple starts early changing things about how these devices should work and be maintained and how Apple wants things done, I put things in place, early to do things with own my paid for Apple devices to do things my way and NOT always 100% Apple"s way.

That's the way I “roll”!

The hardware and software here are interlinked.

There is no solution that involves access to new apps on old iPad devices.

App support by developers prior to the most recent three versions gets spotty, and this iPad yet further back.

Expect this iPad to run the built-in apps, what was previously downloaded when closer to current, but not much else.

On any deprecated and outdated iPad or iPhone such as this, the experience will be somewhere between poor and bad.
