If a send an iOS text as a sms text message will it notify the person I’m sending it too. Will they know I sent it as a sms message ?

Cellular iPad sending messages to SMS group chats from its own sim card? I have a 11" iPad Pro M1 with cellular. I created a SMS group chat with a bunch of friends to plan a camping trip. When I sent the message several people asked what phone number it was that sent it since nobody had that number in their contacts. I checked on my iPhone and it does not show any unknown numbers. Does the iPad send text messages with its own phone number if your iPhone is not nearby or on the same WiFi network?

Yes. If you send it as SMS then it will received as SMS.
