How can I find out the date of the very first message sent to someone specifically?

If you have iMessages settings with Settings > Messages > Keep Messages [Forever]
Then using search bar under Message app enter Mobile Number / their Apple ID / Name as stored in your Contact List
All messages will get populated [Scroll all the way up]
To be sure, search messages for all the three: Mobile Number / their Apple ID / Name as stored in your Contact List
