I'm new to the new file system used on Catalina. In the about section its showing the Macintosh HD and also ???
I did install a virtual machine so that I could run some legacy apps. Would this be where the extra storage is being used in ??? also linked to the storage being used in "Other containers"
Disk Utility does show just over 3GB on Virtual machines.
Any help appreciated.

Did you reinstall Catalina? It appears you did something to create two Macintosh HD - Data drives, and an orphaned disk.
Do you have a backup?
"Other Volumes in Container" are the other volumes in the container. You should have five, but you have seven.
Catalina splits the drive into two Volumes for the OS and Data, and the other three are Recovery, VM, and Preboot.
You have an additional Macintosh HD - Data volume and what appears to be an unallocated volume.
A Container in APFS is like a partition, but all of the Volumes in the Container share the storage space.
I would completely erase the drive and migrate from your backup.

I never even thought of that!
I'm backed up on time machine.
I installed Big Sur Beta but it had a few bugs in the mail app so was advised to go back to Catalina. I did do another install but presumed it would over write Big Sur. Looks like it hasn't.
Is completely erasing the best way or can I remove the data and orphaned disk?
Completely erasing is the only way to revert to a previous OS. You can restore from a time machine backup, but that will erase the disk, too.
But, if you don’t choose the backup just prior to installing Big Sur, you will end up with the same problem you currently have if you backed up after.
