Any time MS updates office (which we all know is very frequent) Apple verifies the programs Word, Outlook, Excel and Powerpoint, which takes up to 5 Minutes. It does the same with other 3rd party software. More than annoying; what can I do to stop ?

Nothing. It's part of Catalina. It verifies (doing what exactly, I don't know) any third party software that is new, or has changed. It does this only once for each app.
In addition to the "verification issue", I had to de-install Norton Securities, which came with Xfinity. Apple told me that the APP is not yet ready for Catalina and does not work with it. They told me that they are in contact with Norton to resolve the issue, and so far I have not heard back. There is more and I am no longer willing to spend any more time on it.
Catalina does not work for me; I am no longer impressed with with Apple at all.

Yup. For the Mac version of Office, it's on a monthly update cycle of improvements, bug/security fixes, etc.

Why did you internet provider want you to install malware?
All - literally all - AV software is useless. Consider it a gift to yourself you uninstalled Norton.
Usually, you can fix it by reinstalling the apps. Put the Office apps currently in the Applications folder in the trash. Download the full Office installer directly from Microsoft (the one without Teams, unless you need that). Reinstall.

Microsoft constantly updates the apps by replacing them with new versions. Since they are new, they get verified.
You might try turning off automatic updates and just manually update occasionally.
Been there, done that several times. The issue lies with Apple. I am in contact with Apple and they told me that they are in communication with MS. MS did an office-update on Sept. 15th. and Apple had to verify all office Apps (Outlook, Word, Excel and PP). The process took about half an hour, where all APPS crashed several times, especially Outlook.
