why is my 2020 MacBook Air camera quality so grainy?
MacBook Pro 13″, macOS 10.14
It is a 720P camera and that is why it is grainy over the same area when compared to a 1080P or a higher resolution camera.

I have the same problem as well but I noticed if your light is brighter the image becomes less grainy. My MacBook Air 11 circa 2012 has a better image...but I really needed an upgrade. Best to be in a well lit room or have a spotlight on you. :-)
