There are a whole host of keyboard shortcuts available in pages. But what’s worked best for me in note taking situations like you describe is Pages’ automatic listmaking function.

So, for example, if you type, say, a bullet (shortcut: Option-8), or a letter or number followed by a period and a space.

  1. For example, 1. or A. followed by a space.
  2. Type the first item in your list, then press Return.
  3. Every subsequent item in the list automatically begins with the same character., whether you started with bullets or numbers and letters, which are incremented accordingly.

To change the indent level (hierarchy) of an item in the list, click anywhere in the item, then do one of the following:

    • Move the item to the right: Press Tab.
    • Move the item to the left: Press Shift-Tab.

There’s more on this in the linked article, but it is pretty easy to use and should get you pretty far along the way where you need to go.

Hope it helps.
