Font Colour / Pages
Are you able to change the font colour to a specific pantone? Using a hex code preferably? Or eyedropper?

There is no Pantone color support in Pages, but the color (picker) globe adjacent to the Pages v10.1 Text color selector in the Format panel offers color selection options, including an eye dropper, and hex (but not alpha hex) input.
