Deleting data from Mac but not iCloud

How can I delete personal data and files from my iMac without deleting it from the cloud?

What kind of data?

In Sys Prefs>iCloud, what all is syncing?

Is it iCloud or iCloud Drive?

Personal information. I am “decommissioning” this Mac, but I want to scrub it of personal information. I have deleted files I can see but I am concerned about what I can’t see!!!
