ApplePay and link to email

After making a purchase I didn't receive a confirmation email for, the vendor informed me my apple pay was linked to a very old email address of mine. I don't see where I can check to remove it. She said by default,because I paid with ApplePay, it used the email associated with it. I haven't used that email in years and have no way to access. Does anyone know where to check this?
