How do I delete backup for just one app?

One cannot go into a backup and choose what can or cannot be deleted; however, if you wish to stop backing up the data for that particular app you can go to Settings > Name > iCloud > turn off the app. If not there, try Settings > Name > iCloud > Manage Storage > Backups > choose device > turn off app.
