Why don't our statements have our account information?

I know of no way to do that. You may want to contact an Apple Card Specialist. Open the following article and search for the work specialist: Manage your Apple Card account - Apple Support

As you have apparently found the account number is not on the monthly statement.

On your phone, go to Settings > Wallet & Apple Pay > Apple Card > Card Information > Card Number.
