I keep getting a message in my phone that it will not update it needs Moore storage

Try unpairing and pairing your watch again and restoring from the backup. This deletes all temp and corrupted files and re-indexes the file system. This helps free a lot of space.

You can’t upgrade the storage, you will need to find stuff to delete.
