Welcome!
We are not Apple but rather end users like you, so cannot quote Apple service prices.
Please see: Install memory in an iMac - Apple Support
Apple did not design the 21.5-inch iMacs made after 2011 to have user-accessible RAM, and Apple will not do any upgrades.
Increasing the RAM requires professional installation. Once the case seal is broken (yes, the case is glued together), almost everything inside must be gutted to access the RAM slots. The chances of damage are so high that some Apple Authorized Service Providers will not attempt the upgrade. A local provider who will consider the RAM upgrade says he charges two hours of labor at US$75/hour on top of the cost of RAM and the reseal kit. Based on the US$320 OWC pricing for the 64GB RAM that works in that model, you are at close to a minimum of US$500 from a private provider.
I do not know of this "unity engine" but, If 32GB is not enough, consider a professional 27-inch iMac. They can handle up to 128GB RAM and RAM is easily user-accessible.
