I I cannot pair my iPhone 8 with my Bluetooth device that I always was able to pair with before. I had an iPhone 7 and then removed the chip and put it in the iPhone 8. There are no other device is connected to my Bluetooth. I don’t know what to do and I

I fixed it by rebooting the devise
That means you did not successfully get it into pairing mode so that you could connect it to the new phone.
Contact the manufacturer of the device for assistance if you don't know how to do that.
Follow the instructions for the device you're trying to pair the phone with to put it into discoverable (pairing) mode.
Moving the SIM from one phone to another does not 'move' any paired devices.
I did and still no luck. It still works on my old phone when I turn it on too
