why would a 2019 MacBook Pro 13" screen go black and white only?

You may have inadvertently chosen the Grayscale filter in accessibility settings on your MacBook Pro.
Open System Preferences ➔ Accessibility ➔ Display ➔ Color Filters Tab ➔ Uncheck Enable Color Filter.

Thanks, I tried that and was online with support several times. Coming back after 10 days at repair center. Hopefully I’ll find out what happened.
