I have 5 iphones using one apple ID. Can I save separately contact list for each iphone in cloud? I don’t want to merge contact list of them when doing recovery.

If you create an entirely new Apple ID, then that's different as contacts will remain on the old ID.
Once you save your contacts in iCloud and have iCloud enabled on all 5 devices, they will sync across all 5 devices simultaneously, no merging involved.
If I create new apple ID and replace with the existing on iphone, whether photos, videos and contact list are deleted in iphone or not ?
