I cannot upgrade my OS X Yosemite 10.10.5 and my iTunes will not recgonize my new iPhone 11 pro. What to do?
Can I add a new version of iTunes? But keep the old which has my old phone, iPhone 6, back up?

From reading your post, it's understood your iPhone 11 Pro won't be recognized with iTunes on your Mac using OS X Yosemite. iOS 13 requires iTunes 12.8.2 or later which is supported on OS X El Capitan or later.
