Is my info an data being spied on
My best friend agreed to put a 2 nd line on her account an get my iPhone 11 as long as we do I do pay her monthly, but I’m worried she can see all of my data ,messages, info etc? Is this possible

No. Not unless you give her the credentials for your Apple ID.
What she can see is a record of your phone calls provided by the cellular carrier. Not the contents, just the numbers, times, and call duration.
