Make a separate account for your child with family sharing:

Family Sharing and Apple ID for your child - Apple Support

Then sign out of your apple ID from his device and sign in with his account.

Apps downloaded with your apple ID will still be connected to your apple ID, TO connect them to his apple ID, you migth want to delete the apps and re download.

Alternatively you can follow this guide and set up the phone as brand new to avoid anything of your account being left:

What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support

Good luck!
