The person organizing the meeting can block it from being recorded except by themselves. Check with them to get a recording of the meeting.

On iOS 13, you can screen record by adding the button to Control Centre (Settings > Control Centre > Add Screen Recording). If you hold down the Screen Recording button in Control Centre, you can choose whether you want your microphone to be enabled. All audio is recorded as long as your volume is up.
Although many apps let you screen record within them, some may not allow you to so keep that in mind.
So if I am on mute I can’t record audio?
No, if you have your microphone disabled in the Control Centre, it will still record the audio.
If you have muted the audio feed from others there is nothing to record. If you've muted yourself that will not affect it.
It’s very strange, I had a Webex meeting, I heard everything during the meeting, but I was on mute. I used headphones.
I recorded the meeting, and now there is no audio recorded.
