Downgrading macOS
If I have Catalina 10.15.16 which was originally installed on the Mac and want to install Mojave what can I do

You can not downgrade an OS to a version lower than what was originally installed on the Mac.
Your only option would be to create a Mojave VM in Parallels Desktop, VMWare Fusion or VirtualBox.
Actually im not 100 sure Mojave wasn't installed, is there a way to check that?
