How to switch off Only one SIM card on iPhone XR while using an eSIM and physical SIM? Any bright ideas? Thanks

Just go to Cellular (or mobile) and disable the line you don’t want to use.

Yes. It applies to all.
You should be able to swap which one used for mobile data and toggle each one “on/off” as much as you want.
Remember, the phone is designed to hold multiple e-SIMs, so the ability to switch between them - and the hard-SIM is a basic operational requirement.

What you DON’T want to do is “Remove this Service” or some similar phraseology.
That function indeed erases the eSIM; you’d than have to re-provision it w/ your carrier.
