You can only see your most recent back from the basic settings of the device by going to SETTINGS > YOUR NAME > iCloud > iCloud Backup. However, iCloud stores 3 of the most recent backups of your device. The other 2 can only be seen by erasing the device and going through the base setup screens. When prompted about Apps and Data and choosing Restore from iCloud Backup you sign into your ID and will be presented with recent device backups.
