How do I enable the 'Date' in Apple Watch faces in Watch OS 7?

With the update to Watch OS 7 I am no longer able to choose having the date display on an 'analog' watch face... On faces that appear to support showing the date, it appears to be turned off and I cannot seem to turn it on.

Any thoughts?

Reinstall the Calendar app on your iPhone if you've deleted it.
