The orange dot means that an application on your phone is using the microphone. The microphone is being listened to and could be recorded. How can I find out what app was using my microphone while I was on the phone? I didn't see any way to find out within the control center. If I'm just on a regular phone call, I see no reason any app should be listening in.

The orange dot indicates the microphone is/was in use. Nothing more.
I think you will find that if you were on a phone call, the app using the microphone would have been the phone app!

Do not make or receive any phone calls. By doing this you can guarantee that your microphone will not be used by the phone app.
