I have updated from watchOS 5 to OS 7. The problem is messages notifications in watchOS 7 is cut off a lot of the contents, it's not display full text of the message. In the OS 5 version, messages notifications show very full details.

You may have Notification Privacy turned on.
iPhone>Watch>Notifications>Notification Privacy>make sure this is toggles off
Also check to see your font size iPhone>Watch>Display & Brightness>Slide the text size to adjust
