What am I supposed to do with this information? Most of the choices with regard to legacy are unfamiliar to me.

What is Apple asking me to do about legacy software, be aware or select an option?

At this point, it is a type of warning that these apps will (or may not) run in future macOS updates. There is no option to select. At some point, if an app that you are warned about is critical to you, you will need to check with the app's developers to see if they have (or will have) an update available.
